The old vineyards that Domecq Wineries possesses are a jewel without which this wine would not be possible. Developed with grapes from singular vineyards that have over 50 years of life, there is exercised a close follow up nearing their maturity awaiting the highest point that leads us to the obtainment of an unsurpassable raw material. The harvest is realized at the earliest hour of the morning and the hand of man is the primary tool for this selection.
Winemaking
The de-stemming of the grape is immediate and is sent to the deposits, where it remains at low temperature until the launching of the fermentation. The selected yeasts are the optimal ones to extract the maximum available potential. Once the initial phase is concluded, pomace is slowly pressed in cold granting respect for quality. The aging in French oak during at least 10 months allows the wine to continue its slow evolution.

Pairing
Can be taken by itself, with blue cheese or other strong cheeses, along with desserts based on red fruits. To go with a more original pairing, lamb is recommended, dishes with olive base, sealed tuna and duck breast with red fruit sauce.
