The clusters originated from the oldest plants are carefully selected and hand harvested. The terrior where they come from possesses singular qualities, with a variety of soils and microclimates that favor the optimal development of the vine. Cabernet Sauvignon has had a perfect adaptation, because warm days help it reach its adequate maturity point.
Winemaking
The grape is separated from the stems and the must is taken to the braised clay vessels, where it will have a slow fermentation. The pre-fermentative mashing is given hand in hand to the multiplication of the native yeasts, slowly advancing in the decreasing of sugars and doing pump overs in the ancient fashion. The micro-oxygenation that is provided through the natural porosity of clay provides fixation benefits that are within the key components that and will give longevity to the final product. At the end of the fermentation, the wine is transported to French oak barrels where it will repose until the moment of bottling.
