We chose two blocks of main vineyards: on one side, the Nebbiolo located in the Valle de Guadalupe, with an average age of around 30 years, providing an essential basis to develop a fine storage wine; on the other hand, from Valle de Calafia we obtain a fruit of exceptional qualities that come from vines placed at frank footing, optimal tannic charge and an ideal concentration for a prolonged storage wine.
The year 2019 was marked by a good solar intensity, allowing slow the maturity and development of the adequate components for a wine of great structure. The harvest was realized at the end of September with a yield of 5 tons per acre.
Winemaking
Subject to a classic fermentation for reds, the process begins with a fine de-stemming followed by a prolonged pre-fermentative mashing at low temperature. Later the selected yeasts are inoculated, advancing with closed and open pump overs until the end of the fermentation, after which the wine is allowed to repose in French oak barrels, thus reaching higher complexity.
