The grapes that compose this magnificent wine originate 100% from the Valle de Guadalupe and are carefully hand selected cluster by cluster.
The follow up for maturity was realized in a constant manner by our principal agronomist and the point of harvest, always defined in conjunction with the winery’s enologist, is divided among three different dates to find the optimal maturity point for each variety: the harvest started with Merlot, leaving a space of approximately 3 weeks to continue with Nebbiolo ending at the beginnings of October with Cabernet Sauvignon.
Winemaking
The process is initiated in the winery with a careful de-stemming and the later delivery of the must to the fermentation tanks. Slowly we induce the diminution of temperature reaching an optimal level that allows us to carry out a pre-fermentative mashing to facilitate the extraction of the compounds that will grant the wine longevity.
A few hours after the start of the fermentation there begin the open pump-overs, until a little before finishing with the sugars we give end to this labor, thus protecting in this fashion the fruity aromas.
The aging in French oak barrels for a minimum period of 12 months allows conjugation of adequate components for a robust wine with plenty of character.
At the end of this period the barrels that present the highest aromatic complexity are selected one by one, allowing only the best elements to intervene in the final blend.
