Under the premise of finding ideal sites for obtainment of grape, we have given ourselves to the task to look into those areas where Domecq ventured more than half a century ago, 3 origins that render this anniversary edition, in which modern viticulture becomes present. Loam as basic component of these lands, provide the vine with the nutrients to fructify adequately. The difference in altitude, located along the range between 150 up to 2,000 meters above sea level, allow the grape to have on the one side a balanced maturity and on the other an acidity that will give strength to the resulting wine. The harvesting is done in a totally manual fashion, selecting the clusters one by one.

Winemaking

A la llegada de la uva a la Bodega, esta es despalillada de manera meticulosa, dejando solo los granos que serán enviados a los tanques de fermentación. Al inicio, se hace una ligera maceración, en la que se lleva a cabo la inoculación con una levadura específica, aquella que será parte fundamental para la obtención de la calidad aromática de nuestro vino. Una temperatura media de fermentación de aproximadamente 25°C, es la que predomina durante esta fase, al pasar de aproximadamente 20 días, hemos hecho los descubes, separando vinos flor de aquellos prensa que nos dan robustes y carácter. Una serie de decantaciones posteriores, será el método más natural para que el vino por si mismo vaya autolimpiándose, llegando algunos meses después, el momento ideal para hacer el blend.
