Based on an excellent adaptation to the Valle de Guadalupe terroir, under conditions that take the plant to self-regulate and facility its cultivation to a certain degree, enamored of the sun and high temperatures, the obtainment of a fruit of great quality is achieved. The 2020 harvest carried out on a fresh morning at the end of August, was marked by ideal conditions, with warm days and occasional fog. Fruits in an optimal point of maturity and perfect balance between their components were obtained.
Winemaking
Crafted under the classic conception of fermentation for reds, there is an initial mashing realized at low temperature, with soft pump overs and low incorporation of oxygen to avoid the early degrading of the components, that is cut just at the right moment to inoculate the selected yeasts, slowly increasing temperature to a peak close to 28°C. At this point the pump overs increase in quantity seeking greater input of oxygen and the de-compacting of the hat. At this point the pump overs under the “destelage” technique ease the homogenization of components. At the end of the alcoholic fermentation there are closed pump overs, finalizing the details for separating pomace and new wine. Later on it rests in French oak barrels for at least 6 months.
