The art of winemaking in Mexico
It’s a morning in August. The dawn stands out from behind the hills when the harvesters have already occupied their positions along the vineyards.
The vineyards
The vineyards that surround the winery extend close to the hillside of the mountain, along more than five acres between some of the most ancient strains of the region. We also count with more than 100 acres of controlled vineyards located along the best placement for every type of grape.

The elaboration process
Manual grape picking parcel per parcel
We select and cut the best grapes cluster by cluster without the aid of machinery to maintain their properties intact. It’s important to take advantage of the early hours to reap the fruit while it’s fresh, and will be perceived in the resulting wines.
Architecture at the service of wine
Located at the foot of the vineyard our winery drinks directly from the Spanish enological tradition, with high ceilings, pronounced arches and an intelligent architecture in which the different rooms of production are disposed in sequential fashion to better save the trajectory of the grape.
Fermentation with selected yeasts
After submitting the grapes to a pneumatic pressing that insures an optimum quality, the must is fermented with yeasts of selected origins, with which we’ve been experimenting for over 20 years in order to achieve excellence.
The major aging cellar of Mexico
The wines are aged in barrels of the best brands and materials in a relentless aim to obtain the woods that enhance each type of grape. They later repose in bottle to integrate all their components.

All this process is thoroughly supervised by Alberto Verdeja our Winemaker and Director of winery, who places all his senses at the service of appreciating, profiling and defining the journey of another generation of fine Mexican wines.

The relationship between Alberto and wine begins at six years of age, during a highway drive in which he contemplates the perfectly aligned vineyards that fuse within the horizon. This vision has such an impact on him that just as he reaches the majority of age he enters Domecq winery to work as an analyst, where his curiosity leads him to participate in all areas related to wine creation.
The various enologists who pass during these years of formation are his mentors, an inheritance in which he takes pride and with which he wouldn’t be who he is today: the maximum responsible of one of the most prestigious wineries of Mexico and an enamored who continues to see with childlike eyes that landscape that on a remote day marked his destiny.
His more than 20 years of experience make Alberto Verdeja one of the most authorized and influential voices in Mexican wines, a passion he gladly shares in tastings, interviews, conferences, and of course, with the visitors of the winery, whom he makes participant of all the effort that lies behind every wine, from the conception process up to the more technical aspects without forgetting the mystique that his work involves.
