The peculiarity of this vineyard is that its located less than one kilometer from the winery, it has become the main reason to select the Sauvignon Blanc and create this singular wine, the age of the plants is roughly 25 years, and gives us the certainty of physiological maturity and total adaptation to its environment. The visit to the vineyard during the maturity phase and the tasting of the berries is the manner in which its optimal point is determined. Its orientation is located north to south, with a formation of double string on a soil where sand, loam and silt are distributed in a natural manner. The harvest is realized between the second and third week of August, all done with a careful selecting and totally hand picked.
Winemaking
It all starts with the arrival of the grape to the winery, where it will be pressed in whole clusters, at the moment the first drops start to fall, we separate only the flower must, that which will have great qualities that will develop during the wine transformation process. The fermentation is carried out in braised clay vessels from the XVI century, indigenous to the zone of La Mancha in Spain, which crossed the ocean as part of the legacy of the Domecq family. At the end of the fermentation a fostering (crianza) over lees, where our enologist works on the battonage technique and enriches the resulting wine with daily soft movements, also tasting the wine to determine when it shoud be separated from the thick lees. Its aging in the vessel will be prolonged for at least 8 months, allowing it natural finessing and roundness.
