The Valley of San Vicente, located at the south of Ensenada and with an altitude of a little over 100 meters above sea level, becomes the magnificent placement for the development of the two main varieties of this label, Chardonnay and Chenin Blanc, both fully adapted and offering a fruit of undisputable quality.
Winemaking
With mature grapes at an optimum level of health, which allows a low dose of sulfites, a pressing of entire cluster by means of pneumatic presses, gives way to a must of great clarity to which a rapid decantation is applied and the later inoculation of selected yeasts. Its fermentation is controlled by a constant rhythm of 13° to 15° C, avoiding thus the fall of sugars. The resulting wine is slightly clarified by means of simultaneous decantation during the immediate weeks prior to the end of the fermentation. The success of the mentioned processes yields a wine of great aromatic qualities that displays a total experience of flavor.

Perfect for drinking as an aperitif, but also accompanied by fish and seafood, (ceviches, aguachiles and cocktails) even those with a bit of spice.
